Ingredients
  

  • 2 slices Dave’s Killer Bread toasted
  • ½ block firm tofu
  • ½ cup blueberries fresh or frozen
  • 2 Medjool dates pitted
  • Fresh lemon zest for topping

Instructions
 

  • Add the tofu, blueberries, and dates to a high-speed blender.
  • Blend until completely smooth and creamy, scraping down the sides as needed.
  • Toast the bread until golden.
  • Spoon or pipe the blueberry cream generously onto each slice of toast.
  • Finish with fresh lemon zest and serve immediately.

Notes

For an extra-bright flavor, add a tiny squeeze of lemon juice to the blender.
Use frozen blueberries for a thicker, mousse-like texture.
This spread also works beautifully on pancakes or stirred into oatmeal.
