This Crispy Rice Salad with Peanut Dressing is a vibrant, healthy, and incredibly delicious meal that combines crunchy rice, fresh vegetables, and a creamy peanut sauce.

Ingredients
  

Crispy Rice

  • 2 cups white cooked rice sticky rice is best
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp chili oil

Salad Base

  • 1 head dinosaur kale
  • 1/2 tbsp olive oil
  • pinch salt
  • 1 mandarin orange peeled
  • 1/2 cup chickpeas cooked, or your favorite lentils
  • 1/2 red pepper or 2 small ones
  • 1/4 cup red cabbage
  • 1/4 cup peanut crushed

Peanut Sauce

  • 1/2 cup peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp date syrup
  • 2 tbsp rice vinegar
  • 1-3 tbsp water if too thick

Instructions
 

  • Make Crispy Rice – Mix cooked rice with sesame oil, soy sauce, and chili oil. Spread in a pan and cook at 350 for 20-30 minutes or until crispy.
  • Prepare Salad Base – Massage chopped kale with olive oil and salt. Add mandarin orange slices, chickpeas, chopped red pepper, cabbage, and crushed peanuts.
  • Make Peanut Sauce – Mix peanut butter, soy sauce, date syrup, and rice vinegar. Add water if too thick. Also add any spice you like to add a kick to it!
  • Assemble – Top the salad with crispy rice and drizzle peanut sauce over everything. Enjoy!
