- 2 medium cucumber
- 1/8 red onion
- 1 lemon zest and juice
- 1/4 cup fresh parsley finely chopped
- 2 tbsp olive oil
- 2 tsp balsamic vinegar white or rosé
- 1 tbsp lemon juice
- 1/2 tsp salt
Get Recipe Ingredients
Wash and peel (if not organic) your cucumbers.
Use mandoline to slice cucumber and lemon into thin slices.
On top of you veggies, ad the vinaigrette and zest the lemon.
Mix and enjoy!
