Quick & Easy Vegan Green Bean Salad

This is the easiest green bean salad ever. Just 4 fresh ingredients. Kids and parents love it!

Ingredients
  

  • 1 pound green beans
  • 1/8 red onion
  • 1/4 cup pomegrenate arils
  • 1/4 cup vegan feta

Basic Vinaigrette

  • 1 tbsp balsamic vinegar rose or white
  • 1 tbsp olive oil
  • 1 tsp date paste optional

Instructions
 

  • Steam the green beans to your desired level of doneness. I steamed 3-4 minutes.
  • While beans are steaming, make the vinaigrette and slice onions.
  • Start layering with the salad in a plate. Beans, red onions, arils and feta. Add vinaigrette when ready to eat. Enjoy!

Notes

For extra flavor, roast the green beans with a drizzle of olive oil, salt, and pepper before assembling the salad.
To make this salad ahead of time, prepare the vinaigrette and toss the green beans with it. Store in the refrigerator for up to 2 days.
Add a handful of chopped fresh herbs like mint or parsley for a burst of freshness.
This salad is perfect for a potluck or picnic.
f you don't have pomegranate arils, you can substitute with dried cranberries or chopped dried apricots.
