A quick stovetop apricot compote made with fresh apricots, cinnamon, and maple syrup. Perfect for rescuing overripe or slightly dry apricots and turning them into a cozy, naturally sweet topping.

Ingredients
  

  • 6 fresh apricots pitted and chopped
  • 3 tbsp tbsp maple syrup adjust to taste
  • 2 tbsp water or orange juice
  • ½ tsp cinnamon
  • Pinch of salt
  • Optional: ½ tsp vanilla extract or lemon zest

Instructions
 

  • Add chopped apricots, maple syrup, water (or juice), cinnamon, and salt to a small saucepan.
  • Bring to a gentle simmer over medium heat.
  • Reduce heat to low and cook for 10–15 minutes, stirring often, until apricots soften and break down.
  • Mash with the back of a spoon for a jammy texture or leave slightly chunky.
  • Remove from heat and stir in vanilla or lemon zest if using. Let cool slightly to thicken.
