6 fresh apricots pitted and chopped 3 tbsp tbsp maple syrup adjust to taste 2 tbsp water or orange juice ½ tsp cinnamon Pinch of salt Optional: ½ tsp vanilla extract or lemon zest

Add chopped apricots, maple syrup, water (or juice), cinnamon, and salt to a small saucepan.
Bring to a gentle simmer over medium heat.
Reduce heat to low and cook for 10–15 minutes, stirring often, until apricots soften and break down.
Mash with the back of a spoon for a jammy texture or leave slightly chunky.
Remove from heat and stir in vanilla or lemon zest if using. Let cool slightly to thicken.
