Ingredients
  

  • 2 cup sweet potato cooked, puree
  • 1 cup sugar-free dark chocolate sweetened with stevia
  • 1 scoop protein powder I use chocolate fudge

Instructions
 

  • Add the cooked/steamed sweet potato to a high-speed blender or food processor.
  • Add the dark chocolate and the protein powder, then blend until the mixture is completely smooth, thick, and creamy, stopping to scrape down the sides as needed. The texture should resemble a rich chocolate mousse with no visible sweet potato bits.
  • Transfer the mixture to a serving dish or individual ramekins, cover, and refrigerate for at least 1 hours to allow it to firm up and deepen in flavor. Better the next day!
  • Just before serving, dust lightly with unsweetened cocoa powder and chopped nuts for a sophisticated, slightly bitter contrast to the natural sweetness.
