These Vegan Gluten-Free Coconut Date Cookies are insanely delicious and refined sugar-free! Made with just dates, shredded coconut, and optional dark chocolate, they’re chewy raw or perfectly toasty when baked. A quick, healthy snack for any time!

Ingredients
  

  • 1 cup soft Medjool dates pitted
  • 1 cup unsweetened shredded coconut
  • 2 tbsp dark chocolate, melted optional

Instructions
 

  • In a food processor, blend dates until they form a sticky paste. Add shredded coconut and pulse until well combined.
  • Roll into small balls, then flatten into cookie shapes.
  • Bake (Optional) – If you want a firmer texture, bake at 325°F (160°C) for 10-12 minutes until lightly golden. Once cooled, add melted chocoate.
  • Chill & Enjoy – Let cool (or refrigerate for a firmer bite) and enjoy!

Notes

Want to add a twist? A pinch of cinnamon or vanilla would be delicious! The drizzle chocolate for a perfect cookie!
