Winter Detox Beet Salad

Bursting with flavors and antioxidant-rich, this salad willl please the whole family. Beets, pecans, cuties (mandarins) and feta marry perfectly well!

Ingredients
  

  • 5 small beets cooked
  • 2 cups arugula
  • 2-3 mandarins
  • 1/2 avocado diced
  • 1/2 cup pomegranate arils
  • 1/4 cup red onion finely chopped
  • 1/4 cup vegan feta
  • 1/3 cup nuts roasted pecans or slivered almonds
  • 2 vegan sausage soy based, roasted

Vinaigrette

  • 2 tbsp orange juice
  • 1 tbsp balsamic vinegar rosé or white
  • 2 tbsp olive oil
  • 1 tbsp tahini
  • 1 tsp dijon
  • pinch of salt

Instructions
 

  • Slice sausage and add to air fryer. 350F for 4 minutes.
  • Dice beets and avocado. Peel cuties (mandarins).
  • Add all the ingredients to a bowl. Arrange the salad in layer of the order of the ingredients.
  • Make vinaigrette and add to salad. Enjoy!

Notes

For the sausages, I like the sweet apple ones. Feel free to use any kinds but not vegan hotdogs sausages.
Feel free to switch the arugula for spinach.
