Easy, vegan and gf chocolate cake. Some say mousse but I find it more dense and love to call it cake!

Ingredients
  

  • 2 cup sweet potato cooked, puree
  • 1 cup dark chocolate

Instructions
 

  • Add pureed sweet potato and melted chocolate in a blender and mix until creamy. Refrigerate 2 hrs. Serve with powedered cocoa powder.

Notes

Melting chocolate in a double boiler is easy and smooth, but if you're short on time, the microwave works too. Just add 1 tablespoon of milk to help it melt quickly and evenly.
