Instructions
Line a baking sheet or plate with parchment paper and set aside.
Melt the dark chocolate using a double boiler or microwave in 20–30 second intervals, stirring between each, until smooth.
Dip each piece of dried dragon fruit halfway (or fully, if you prefer) into the melted chocolate.
Place the dipped fruit onto the prepared parchment paper.
While the chocolate is still wet, sprinkle lightly with sprinkles, if using.
Allow the chocolate to set at room temperature or place in the refrigerator for 10–15 minutes until firm.
Enjoy immediately or store in an airtight container.
