Rigatoni Pizza Skewers (Air Fryer Recipe)
Crispy, cheesy, and packed with bold pizza flavor, these Rigatoni Pizza Skewers (Air Fryer Pasta Pizza Bites) are the ultimate plant-based twist on pasta night — and yes, the kids will devour them!
Equipment
- 4 Wooden or metal skewers
Ingredients
- 80 cooked rigatoni noodles about 20 per skewer
- 1 cup canned pizza sauce or plain tomato sauce with Italian herbs
- 1 cup shredded vegan mozzarella cheese or your favorite meltable vegan cheese
- 1 tbsp olive oil optional, for brushing skewers
- Salt and pepper to taste
Instructions
- Cook the rigatoni until al dente, then rinse with cold water and drain well. Let them dry a bit to help them stay on the skewers.
- Thread 20 cooked rigatoni noodles onto each skewer carefully. You may need to pierce one end at a time.
- Lay skewers flat on a parchment-lined tray or air fryer basket. Brush lightly with olive oil if using.
- Spoon pizza sauce over each skewer, filling the center of each rigatoni tube slightly.
- Sprinkle vegan cheese generously over the top.
- Add optional veggies if desired.
- Air fry at 400°F for 5–6 minutes, or until the cheese is melted and slightly golden.
- Garnish with fresh basil if using, and serve hot!
Notes
If using wooden skewers, soak them in water for 20–30 minutes beforehand to prevent burning.
Kids love this with dipping sauce — serve extra pizza sauce or a dairy-free ranch on the side.
You can also make this gluten-free by using GF rigatoni.
