Equipment

  • 4 Wooden or metal skewers

Ingredients
  

  • 80 cooked rigatoni noodles about 20 per skewer
  • 1 cup canned pizza sauce or plain tomato sauce with Italian herbs
  • 1 cup shredded vegan mozzarella cheese or your favorite meltable vegan cheese
  • 1 tbsp olive oil optional, for brushing skewers
  • Salt and pepper to taste

Instructions
 

  • Cook the rigatoni until al dente, then rinse with cold water and drain well. Let them dry a bit to help them stay on the skewers.
  • Thread 20 cooked rigatoni noodles onto each skewer carefully. You may need to pierce one end at a time.
  • Lay skewers flat on a parchment-lined tray or air fryer basket. Brush lightly with olive oil if using.
  • Spoon pizza sauce over each skewer, filling the center of each rigatoni tube slightly.
  • Sprinkle vegan cheese generously over the top.
  • Add optional veggies if desired.
  • Air fry at 400°F for 5–6 minutes, or until the cheese is melted and slightly golden.

Notes

If using wooden skewers, soak them in water for 20–30 minutes beforehand to prevent burning.

You can also make this gluten-free by using GF rigatoni.
