  • Olive oil (a drizzle goes a long way)

Ingredients
  

  • 2 medium cucumber
  • 1/8 red onion
  • 1 lemon zest and juice
  • 1/4 cup fresh parsley finely chopped
  • 2 tbsp olive oil
  • 2 tsp balsamic vinegar white or rosé
  • 1 tbsp lemon juice
  • 1/2 tsp salt

Instructions
 

  • Wash and peel (if not organic) your cucumbers.
  • Use mandoline to slice cucumber and lemon into thin slices.
  • On top of you veggies, ad the vinaigrette and zest the lemon.
