Veggie-Filled Vegan Chicken Alphabet Soup
Ingredients
- 1 carrot
- 1 yellow squash
- 1/2 onion large
- 3 garlic cloves
- 2 tsp salt
- 1/4 tsp turmeric
- 6 cup water
- 1 tsp dried parsley or basil
- 1 cup alphabet noodle
Instructions
- In a medium size pot, boil water and add pasta. Boil until noodles are 90% cooked (littly aldente).
- In a larger pot, add all the other ingredient (except the parsley or basil and pasta). Boil until veggies are soft. About 7-10 minutes.
- Transfer veggies and water to a blender and mix until perfectly smooth. Add back to pot. Add noodles and taste. Add salt if needed.
