As a nutritionist and a huge fan of beets, I created this Winter Detox Beet Salad to showcase their earthy sweetness and incredible nutritional benefits. Winter Detox Beet Salad
Bursting with flavors and antioxidant-rich, this salad willl please the whole family. Beets, pecans, cuties (mandarins) and feta marry perfectly well!
Ingredients
- 5 small beets cooked
- 2 cups arugula
- 2-3 mandarins
- 1/2 avocado diced
- 1/2 cup pomegranate arils
- 1/4 cup red onion finely chopped
- 1/4 cup vegan feta
- 1/3 cup nuts roasted pecans or slivered almonds
- 2 vegan sausage soy based, roasted
Vinaigrette
- 2 tbsp orange juice
- 1 tbsp balsamic vinegar rosé or white
- 2 tbsp olive oil
- 1 tbsp tahini
- 1 tsp dijon
- pinch of salt
Instructions
- Slice sausage and add to air fryer. 350F for 4 minutes.
- Dice beets and avocado. Peel cuties (mandarins).
- Add all the ingredients to a bowl. Arrange the salad in layer of the order of the ingredients.
- Make vinaigrette and add to salad. Enjoy!
Notes
For the sausages, I like the sweet apple ones. Feel free to use any kinds but not vegan hotdogs sausages.
Feel free to switch the arugula for spinach.
