Fresh Green Bean Salad Recipe with Best Balsamic Dressing

Use fresh ingredients

I love a fresh crisp-tender green beans not just for a summer meal but anytime of the year as it is so versatile and makes the perfect side dish for many meals. Best served at room temperature, the cooking process is fast and easy. I like to steam beans on high heat for about 3 to 4 minutes and then pout them in cold water to they keep their color and crisp. Once cooled, I add red onion, feta cheese (vegan), white balsamic vinegar and pomegranate arils. Sometimes I will switch it to make it a more complete meal with kidney beans, cherry tomatoes, fresh basil, dijon mustard, sweet onions and pasta to make into a pasta salad. This pasta salad is even best the next day!

Ingredients
  

  • 1 pound green beans
  • 1/8 red onion
  • 1/4 cup pomegrenate arils
  • 1/4 cup vegan feta

Basic Vinaigrette

  • 1 tbsp balsamic vinegar rose or white
  • 1 tbsp olive oil
  • 1 tsp date paste optional

Instructions
 

  • Steam the green beans to your desired level of doneness. I steamed 3-4 minutes.
  • While beans are steaming, make the vinaigrette and slice onions.
  • Start layering with the salad in a plate. Beans, red onions, arils and feta. Add vinaigrette when ready to eat. Enjoy!
