Vegan Pumpkin Spice Chocolate Latte
This Vegan Pumpkin Spice Chocolate Latte recipe is both healthy and delicious because it combines nutrient-rich ingredients like plant-based milk and pumpkin puree, which are packed with vitamins, antioxidants, and fiber. The Medjool dates provide natural sweetness and energy, while cinnamon and pumpkin spice add warmth and flavor without any added sugars. The unsweetened cocoa powder contributes a rich, chocolatey taste along with beneficial compounds like flavonoids, making this a guilt-free treat that satisfies cravings and nourishes the body. - Unsweetened cocoa powder: Rich in flavonoids, cocoa powder supports heart health, improves mood, and provides a dose of antioxidants, while being low in sugar and calories.
Substitutions
- Plant-based milk: Almond milk, soy milk (my favorite), oat milk, coconut milk, or rice milk.
- Pumpkin puree: Sweet potato puree, butternut squash puree, or mashed bananas.
- Medjool dates: Agave syrup, maple syrup, date syrup (my favorite), honey (if not strictly vegan), or other dried fruits like figs or raisins.
- Cinnamon: Nutmeg, allspice, or a spice blend like chai seasoning.
- Pumpkin spice: A mix of cinnamon, nutmeg, ginger, and allspice, or simply use more cinnamon.
- Unsweetened cocoa powder: Carob powder, dark chocolate melted and cooled, or a chocolate protein powder.
So simple, yet delicious! I’m not a whipped cream fan at all, but doesn’t it look so pretty?
My teenager said, “Wow mom, that looks so good!” He drank it all and loved it!
He mentioned it wasn’t too sweet but tasted amazing, and he really enjoyed it! Isn’t it great to have healthy, vegan, coffee-free latte options?
